This urban food, while similar to kale purchased by the man at stores and farmstands, is worthy occupation fare during times of strife. Preparation requires cutting off leaves at the stem with a leatherman knife or tie off with guitar strong then soak for 5 to ten minutes in water bath to remove traces of street urine. For quick consumption, de-rib, roll leaves into cigar shape, cut into little stubs and fry in skillet with ghee, oil for free butter pats found at the breakfast bar in extended stay hotels near Chinatown.
